
After last year's agar agar mooncakes, this year I made konnyaku jelly mooncakes--they tasted more refreshing because they had bits of fruit in them: kiwi, strawberries & aloe vera!
Unlike last year's mooncakes, these were easier to make--just follow the instructions for konnyaku jelly making, pour in a thin layer to solidify, put in the fruit slices, then pour the remaining jelly over. Cool then put in the fridge to chill.
One tip, I used about half the recommended amount of sugar for the konnyaku jelly making.
This was a fun activity as the kids are now old enough to help with the washing, plucking and cutting of fruits. Dan also helped me to spoon in the jelly. Happy mooncakes everyone!
