Pineapple tarts again!

Happy Chinese New Year! This is the year of the Dragon--it is my year. Yes, I just told you my age! =)

Like last year, we made pineapple tarts from scratch, using the recipe from a cookbook I edited, Cooking for the President by Wee Eng Hwa.

Of course, Ms Wee's version is a bit more elaborate than my slightly-lazy, watered down version, but... I'd like to think I did her proud by producing a decent albeit altered version of her recipe! ^__^

Dan & Ben were very helpful--they helped to mix the ingredients for the pastry, and showed great expertise and enthusiasm for rolling the pineapple "jam" into perfectly round balls.

Well, we only made one batch of a bout 60 tarts, so we won't be packing and giving them out extensively. This was more a fun family activity to get the kids (and myself) into the spirit of Chinese New Year.

We also made bak kwa this year, from scratch! Watch out for that post! =)
