I have found a chicken rice recipe that is better than my previous one, where I steamed the chicken. This recipe calls for the chicken not to be boiled, but steeped in just-boiled water, several times. And that's it! It's amazingly simple and the meat comes out tender and yummy. Since I discovered it, we've had like chicken rice 5 times in the last 2 months! Tonight's chicken rice was tougher than usual & the rice was not as good. I have to go figure out why, and will post a recipe soon. :)
