A bit of work, but worth it.
3 or 4 pork chops (regular size, from supermarket) 3tb plain flour 4tb bread crumbs (I use Japanese bread crumbs called panko) 2ts light soya sauce 1ts pepper 1ts sugar 1/2 egg, beaten ---------- Sauce: 1 onion, thinly sliced into cubes 1ts tomato sauce 1ts oyster sauce 1ts light soya sauce 1ts sugar 200ml water 6tb mixed corn/carrot/peas - the frozen kind
1. Pound the pork chops with your hand, to flatten slightly and tenderize. 2. Marinade the pork chops with the 2ts soya sauce, pepper, sugar and egg. 3. Heat up some oil for deep frying. When hot, coat the pork chops with flour and then bread crumbs. Deep fry till golden brown and set aside to cool. 4. To prepare the sauce, fry the onions till fragrant, then add the tomato sauce, oyster sauce, 1ts soya sauce, 1ts sugar, 200ml water and peas/carrot/corn. Bring to boil and pour over pork chops when ready to serve.
coincidentally, i'm hainanese...& oh yes, i love hainanese pork chop!...& you've definitely created a very wonderful crisp just from the look of it.
