Easy to do and yummy
4 eggs 1/2ts sugar 1 ts hua tiao jiu dash of salt & white pepper 1 tb cornflour 2 tb water 1 thumb of ginger, sliced 1 cup frozen crabmeat, defrosted 1 cup bean sprouts (tao gay) 1 ts soya sauce a few drops sesame oil 1 stalk spring onion, chopped
1.Beat eggs together with sugar, hua tiao jiu, salt and pepper. 2. Mix cornflour and water into a paste and stir into egg mixture. 3. Heat some oil in a pan. Fry ginger till fragrant. Remove the ginger - it's the gingered oil you want. 4. Saute beansprouts and crabmeat in gingered oil. Season with soya sauce and sesame oil. 5. Pour egg mixture over the beansprouts and crabmeat. Cook without stirring till egg is set. Garnish with spring onions and serve hot.
