Steve's summer potato salad

This is my current favourite potato salad - because it's so happy looking. It's got tiny orange flecks of carrot which add colour & delight to the salad. The rest of it? Potato, crab stick, cucumber, corn, ham & mayonnaise. The key is to boil the carrots till very very soft, then grate them finely to create the orange flecks. Once you mix everything together, the orange flecks spread out and cover everything else, giving the salad a lovely happy feeling!
