<p>Eh hem .... Sounds similar.  Let me share my cooking method.  Your description on cooking the chicken, particularly the rice, is what I learnt from my late mother; except for the steeping part in which the chicken is soaked in water several times.  As for soup, I use the same water which was used to cook the chicken in the first instance, not adding chicken stock. I then add vegetable, fish maw (stuffed with mince pork) and some canned green pea, bring them to boil and serve it during the meal; no salt is added as it would have been added when cooking the chicken. Try making the vegetable chicken soup next time you cook chicken rice; I believe its a Hainanese style ! :-)</p>

<p>Actually, that&#039;s what my mommy does. She dunks the chicken in super boiling hot water several times (sometimes up to about 5mins) then turns off the fire and lets the chicken &#039;sit&#039; in the pot of hot water. It doesnt make as yummy a soup accompaniment which is why she also gets a separate pack of bones and such to add more oomph.</p>

<p>I think the chalet is a good location - not ulu - for celebrating Dan&#039;s birthday. It has a relatively decent beach for Dan to play sand, an activity he likes.  And the BBQ area is big enough for adult indulgence in &quot;food&quot; and just chatting watching the kids play! And with friend&#039;s kids around, I think overall Dan, including Ben, must have enjoyed their time there.  Bim recollected spending his childhood days years back at the same location. I hope Dan will recollect this occasion some time in the future too. Happy Birthday Dan !!!</p>
